Cooking is a way of life. If you want to be a cook you have to live like a cook. It is an uniform profession, which means it requires absolute discipline. It’s also art. At the beginning you will first have to learn all the cooking techniques so that you can then shape and develop your culinary character. You have to learn to live with cooking. Adhere to the idea that the restaurant will be home and the cooks will be your family. Learn to be both a professional, an artist, a military and a host. You need to learn to “weigh” correctly the situations to be alert to cultivate and develop your skills. If you do not want it, you do not dream it, you do not have the passion and love to wear your cook’s outfit better not to do it. The kitchen is not one of the places where you can work with the clock in hand.
